Fiona’s Banana Bread
Ingredients
3 large bananas
2 eggs
1 teaspoon baking soda
1 pinch salt
1 teaspoon cinnamon
1/3 cup caster sugar
3 tablespoons olive oil
1 ½ cups self raising flour
Preheat oven to 180°C (convection oven) or 160°C (fan-forced oven). Mash bananas. Add eggs, baking soda, salt, cinnamon, caster sugar, and olive oil.
Add the sifted flour and stir in to mix for a minute or two.
Bake in a tin lined with baking paper for 45 minutes (actual baking time depends on your oven).
VARIATIONS
Add in any pantry or freezer items that you want to use up… like almonds, walnuts, blue berries etc. If it gets too wet increase flour, if it gets too dry increase oil. Use less sugar if you add frozen fruit like blue berries.
